Easy Chicken & Pepper Fajitas w/ Zesty “Sour Cream”🌮🥘

These chicken & pep fajitas are so yummy you have to make them! The zesty “sour cream” is a healthified version and taste waaay better than real sour cream! Also, I added a DIY fajita seasoning you can make (everything tastes better homemade) but to speed things up you can always buy a premixed pack at the grocery store! Enjoy! 😋

1 lb chicken
1 bell pepper
1 red onion
1 lime
1 jalapeño
1/4 c Greek yogurt
Flour tortillas

DIY Fajita Seasoning:
1 Tbsp chili powder
1 1/2 tsp cumin
1 tsp black pepper
1 tsp salt
1/2 tsp paprika
1/2 tsp oregano
1/4 tsp garlic powder
1/4 tsp onion powder
Optional: 1/4 tsp crushed red pepper

Wash & dry all produce. Chop bell pepper, red onion, jalapeño, & lime. Zest 1/2 tsp of lime.

Heat pan up & drizzle some olive oil! Add bell pepper, season with garlic powder & black pepper. Stir until slightly softened about 4 minutes. Add red onion to pan! Stir until soft & fragrant, about 5 mins. Take off pan & set aside.

Heat same pan up with a drizzle of oil. Add chicken. Sprinkle DIY fajita seasoning & salt/pepper. Cook until browned about 5 mins. Meanwhile, in a small bowl, combine Greek yogurt, lime zest, squeeze of lime juice, & 1/2 tsp of DIY fajita seasoning.
Wrap flour tortillas in a damp paper towel & microwave until warm about 30sec-1min. Combine chicken, bell pepper/onion, & jalapeños to tortilla! Top with a drizzle of zesty “sour cream” & squeeze some lime juice! That’s it!
