Who doesn’t love a good meatball!? ESPECIALLY when they are HOMEMADE & HEALTHIFIED!! These babies are seriously SO flavorful you’re going to start making them all the time (meal prep/freezer friendly too;-) because not only are they so delicious and healthy, they are SO easy to make (WIN WIN & WIN!!). Optional Side Tip: Aidan’s cute grandma Joan taught him a little “meatball hack”. If you place a crushed ice cube in the middle of the meatball it locks in added moisture so that your meatballs turn out EVEN MORE juicy! We did a trial run and made half with a crushed ice cube in the middle and half without… we were mind boggled, it really does work! However, if you are in a rush or too lazy the meatballs still come out great! Hope you all love this recipe as much as I do!
Ingredients:
1lb ground chicken
1 egg
1/2 c Trader Joe’s Japanese Style Panko Breadcrumbs
1/2 c Trader Joe’s cojita cheese or parmesan cheese
2 Tbsp avocado oil
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
1/4 tsp black pepper
Steps:
Preheat oven to 400 degrees. Mix all of the DRY ingredients first (everything minus the ground chicken/egg/oil).
Once mixed, add WET (ground chicken, egg, avo oil) ingredients to mixture.
Roll final mixture into meatballs & place on baking sheet!
Bake for 25-30mins flipping halfway through!
