Tone It Up Protein Pumpkin Muffins!🎃

I had some left over pumpkin puree from when I used them in my Pumpkin Turkey Meatballs! recipe so I decided to make some healthy protein pumpkin muffins for a great on-the-go breakfast or mid day snack! Best part about this recipe??? Your house is going to smell AMAZING! Oh… and they are yummy too! For the next time I plan to make these I am definitely going to add some chocolate chips for extra sweetness & nuts for the crunch!

Ingredients:

1 1/2 c rolled oats

1 c pumpkin puree

1 scoop FurtherFood collagen peptides (Promo Code: Jasmine10 for a discount!)

1/4 cup unsweetened applesauce

1 tbsp. melted coconut oil

1/4 c unsweetened almond milk

1/4 c pure maple syrup

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp sea salt

1 tsp cinnamon

coconut oil spray

Optional: 1/4 c chocolate chips because treat ya self!

Steps:

Preheat oven to 350 degrees. Lightly spray muffin pan w/ coconut oil spray.

Combine all ingredients in large mixing bowl. Pour into greased muffin tins & bake for 30 minutes!
