Smoked Paprika Tomato Sauce✨🌶🍅
Last week I had honey grow for lunch (couldn’t tell you the last time I had it, probably sometime during college). I forgot how yummy it was! I got the “Vegan AF”, by no means am I vegan. I am actually far from it lol. My friends joke and call me a carnivore because I am someone who never feels full unless there is some sort of meat in the meal! Anyways, the “vegan af” had this AMAZING smoked paprika tomato sauce which is definitely a waaay healthier option then all the different glazes they offer. It was so good I was determined to re-create the sauce for dinner this week! So here ya have it! I have re-created the smoked paprika sauce and topped it on some easy baked chicken with zoodles/coodles (carrot noodles lol)! Spice up your chicken with this new YUMMY sauce! You won’t regret it 😉
Ingredients:
-2lbs of chicken thighs
-Zucchini Spirals & Carrot Spirals (I decided to be lazy & buy these in the frozen section of Trader Joe’s. I usually make my own with my vegetti I got off amazon!)
-2 Tbsps olive oil
-1 can diced tomatoes or tomato sauce
1 Tbsp Smoked Paprika Seasoning
-S&P & garlic powder to taste!
Steps:
Preheat oven to 400 degrees. Spray baking sheet with cooking spray and fan chicken out in baking dish. Season with garlic powder, S&P. Place tray in the oven, bake chicken for 20 minutes. Once complete, broil chicken for another 10 mins.
While the chicken is in the oven, time to make zoodles/coodles & smoked paprika tomato sauce! Place zoodles/coodles in pan, draining excess water.
Once all water is drained, add diced tomatoes, smoked paprika, S&P on medium low heat. Stir occasionally allowing sauce to reduce and simmer.
