Another quick & easy 15 minute recipe from start to finish! 🙌🏼 This coconut lime shrimp is SO delicious. It gives you all the satisfaction of something so yummy and buttery without actually using butter! 😍 You can add whatever veggies you’d like to this dish! I simply used bell peppers because it was what I had in the fridge! Next time, I would definitely add some mushrooms too! 🍄
Coconut Lime Shrimp🦐
1 lb shrimp
2 tbsp coconut oil
1 clove garlic minced
1 bell pepper (use whatever veggie you love!)
1 can coconut milk
1/4 c cilantro
1 tsp salt, pepper, tumeric
Optional: 1 tsp red cayenne pepper if you want a little kick! 🌶
Pan sear shrimp (or any protein really) in coconut oil on medium high heat for about 2-3 minutes each side.
Remove from pan and set aside. Reduce heat to medium. Add in minced garlic, bell peppers, and a little more coconut oil! Sauté until fragrant/soft!
Add in coconut milk, juice from lime, cilantro, salt/pepper, & tumeric.
Add shrimp back in & simmer for 5-10 minutes. Top with more cilantro!
*I made a side of roasted broccoli & cilantro lime quinoa to go along with this dish!
Easy Roasted Broccoli
Preheat oven to 400 degrees. Spray baking sheet with olive oil spray. Lay broccoli out and season with olive oil, salt/pepper, & onion powder. Roast for 15 minutes! Voila!
Simple Cilantro Lime Quinoa
Add 1 c quinoa and 2 c chicken broth to a pot. Cook until you can’t see anymore chicken broth. Add juice from 1 lime and 1/4 c cilantro. Mix well. That’s it! 🤗
