Healthified Mexican Street Corn!🌽

For anyone who knows me, knows I have a crazy obsession with Mexican Street Corn on the Cob!🌽 This recipe is such a great side dish to bring to your Friendsgiving or Christmas dinner party. **ADDED BONUS: it’s healthy!**

Ingredients:
2 cans of corn or 1 bag of Trader Joe’s Frozen Super Sweet Corn
Cotija Cheese (Mexican Style Parmesan Cheese) $3.69 at Trader Joe’s
3 Limes
1 avocado
1 bell pepper
10 cherry tomatoes
1/2 c Greek yogurt
1/4 c cilantro
1/2 tsp cayenne pepper
1/2 tsp cumin powder
Salt & Pepper

Steps:
Chop avo, bell pepper, cherry tomatoes, & limes. Add all ingredients together in a large bowl. Mix well! That’s it! Quick, easy, & DELICIOUS✨😍
