This week is filled with so many fun activities because it’s Aidan’s birthday week! We’ve been starting every morning with an F45 workout (will do a post about this gym later) followed by 16oz of celery juice😉! We are really trying to focus on self care this year and being healthy inside & out!✨
If you didn’t see my last post, we kicked off his birthday at this cute little restaurant called Little Fish. They have an awesome tasting menu you all have to try! Last night, we went to dinner with Aidan’s family at Royal Boucherie in Old City. The food was SO good and everyone loved it (highly recommend)! Tomorrow, we are celebrating at Top Golf (he LOVES golf, seriously he’s obsessed lol) and the weekend is usually reserved for watching sports. That left tonight as our only “relaxing/chill” night so I decided to make a nice little healthy homemade dinner! I made baked lemon thyme chicken and roasted rainbow veggies! Super easy under 30min meal and very tasty! I baked the chicken in chicken broth because it makes the chicken breast so juicy! Aidan loved it (grabbed seconds right away) and I’m sure you all will too!
Lemon Thyme Chicken🍋🍗
3-4 chicken breasts
1 c chicken broth
1 tsp minced garlic
1/2 tsp oregano
1/2 tsp thyme
S & P to taste
Preheat oven to 400 degrees. Coat baking dish with cooking spray. Heat pan up over medium heat; add olive oil & minced garlic, stirring constantly for 1 minute, making sure not to burn the garlic! Add chicken broth, lemon juice, oregano, and thyme to pan. Stir until heated then pour into baking dish.
Season both sides of chicken breast with S&P to taste. Place chicken in baking dish along with lemon wedges!
Place in oven and bake, basting occasionally for 30 minutes. Remove from oven and let rest for 5 minutes before slicing. Drizzle pan sauce on top of chicken! Super yummy and tender flavorful chicken!
Rainbow Roasted Veggies🥕🍠🥗
White sweet potatoes
Spray baking sheet with cooking spray. Add veggies to baking sheet and drizzle with olive oil. Season with garlic powder, S&P! Add to oven (already heated to 400 degrees from chicken) and cook for 15 minutes. If you like your veggies crispy, after 15 min remove broccoli from sheet pan and broil the other veggies for another 5 minutes!
