This power bowl is SO good and energizing! 🤗 It keeps me full throughout the day so that I don’t overeat (I swear I am always hungry). It is super easy to make and a great meal to prep for the week to pack for lunches! Trader Joe’s EBTB seasoning is a serious investment. It is so tasty and adds the perfect little zing to the avocado🥑! The sweet potatoes🥔 bring a light sweetness to the bowl and the alfalfa sprouts🌱 bring an earthy taste! All in all the flavors of this bowl mesh well together you are going to be obsessed!
Power Bowl Recipe!
The sweet potato takes the longest to cook so I first started with that. Preheat oven to 400 degrees. Dice into cubes and spread on baking sheet. Drizzle with olive oil, S&P, garlic powder, and onion powder. Toss until evenly coated then roast in oven for 30 mins.
Next, place egg in pot of water and cook for 20 minutes. In another pan, drizzle some olive oil and place chicken on pan cooking on medium low heat. Cooking the chicken slowly makes it more tender!
Use super greens as your base. Top with alfalfa sprouts, roasted sweet potatoes, egg, cherry tomatoes, chicken, and avocado. Sprinkle EBTB seasoning on avocado! Drizzle with sriracha! SO yum and you’ll feel full & energized throughout the day!
